The answer depends a lot on what is eating your elephant ears. Are they bugs or slugs? If so, there are a lot of chemicals available at your local garden store that can kill or repel them. Read package directions--some are specific as to the kind of bugs they help with.

According to what I've read, commercial pesticides work best for bugs. In addition to commercial slug baits, diatomacious earth works well to deter slugs and snails.

If it's something bigger (deer, rats, birds...), it gets more difficult. If they're hungry enough, they'll eat your plants whether they're sprayed with ickiness or not. Both commercial and do-it-yourself sprays usually contain hot pepper extract and rotten eggs.
